Carol McKenzie’s Cranberry Cookies
Preheat oven to 350°. Grease a cookie sheet or line the cookie sheet with parchment paper.
In a medium bowl, beat together until fluffy:
½ cup softened butter
1 egg
1 t vanilla extract
Add the following ingredients and mix until well blended:
1 cup plus 2 Tbs flour
½ t baking soda
½ t salt
½ cup oats
1/3 cup packed brown sugar
1/3 cup sugar
½ cup dried cranberries
½ cup white chocolate chips
½ cup chopped pecans
Drop by heaping spoonfuls onto baking sheet. Bake for 8 to 10 minutes, or until edges start to brown. Makes about 18 cookies.

Cranberry Spinach Salad
1pkg (10oz) fresh baby spinach
3/4 dried cranberries
2 green onions, sliced
1/4 cup sugar
1 tsp dried minced onion
3/4 tsp poppy seeds
1/8 tsp paprika
2 Tbs red wine vinegar
2 Tbs cider vinegar
1/4 cup vegetable oil
3/4 cup sliced almonds, toasted
In a large bowl, toss spinach, cranberries and green onions. In a small container, combine sugar, onion, and poppy seeds and paprika. Mix in the vinegars and oil. Drizzle over salad. Sprinkle with almonds, toss to coat.
Makes 12 serviings.
